Mara chekku oil(Cold Pressed) is extracted by a slow-turning wooden press at under 40°C, retaining natural antioxidants, vitamin E, and flavour. Refined oil is heat-treated, solvent-extracted, and bleached — losing up to 70% of its micronutrients. For daily cooking, mara chekku oil is measurably healthier, though ₹150–250 more per litre.

What is mara chekku oil?

Mara chekku (மர செக்கு) literally means "wooden press" in Tamil. It is a traditional oil-extraction method where a wooden pestle — carved from vagai wood — rotates inside a stone mortar at just 14 rotations per minute. Oilseeds like groundnut, sesame, or coconut are crushed slowly, without generating heat. No solvents, no bleach, no deodorisers.

The result: oil that keeps its original aroma, colour, and — crucially — its full nutrient profile.

What is refined oil?

Refined oil goes through six industrial steps:

  1. Degumming — phosphoric acid removes gums.
  2. Neutralisation — caustic soda strips free fatty acids.
  3. Bleaching — fuller's earth removes colour.
  4. Deodorising — steam at 240°C removes odour.
  5. Winterising — waxes filtered out at low temp.
  6. Solvent extraction (often) — hexane pulls residual oil.

Temperatures during refining regularly exceed 200°C. At those temperatures, most fat-soluble vitamins (A, D, E, K) and natural antioxidants like polyphenols and lignans are destroyed.

Why does mara chekku oil cost more?

One 15-kg batch of groundnuts yields roughly 5 litres of mara chekku oil after 90 minutes of pressing and 48 hours of settling. The same groundnuts sent through a solvent-extraction plant yield 6.5 litres in 20 minutes. The slow, solvent-free method produces less oil from the same seeds — so the cost per litre is naturally higher.

Which is healthier?

For everyday cooking, mara chekku oil wins on nutrition, flavour, and ingredient transparency. Independent lab tests show mara chekku groundnut oil contains 18–22 mg of vitamin E per 100g, compared with 7–10 mg in refined groundnut oil. Sesame mara chekku oil retains sesamin and sesamolin — two lignans with proven cholesterol-lowering effects.

When is refined oil acceptable?

For deep-frying above 200°C, the smoke point of refined oil is higher and it discolours less. Many homes keep a small bottle of refined oil exclusively for diwali snacks, while using mara chekku for daily tempering and cooking. This is a reasonable compromise.

How to switch (the easy way)

  • Week 1: Replace your tempering (தாளிப்பு) oil. Mara chekku sesame or groundnut in a small bottle.
  • Week 2: Replace cooking oil for sabzi and dal.
  • Week 3: Replace rice-oil for pulao and biryani.
  • Ongoing: Keep refined only for deep-fry occasions.

Can mara chekku oil lower cholesterol?

Mara chekku sesame oil retains sesamin, sesamolin, and polyphenols — compounds shown in peer-reviewed studies to reduce LDL ("bad") cholesterol. Groundnut mara chekku oil retains phytosterols with similar effects. Refined versions of both lose most of these compounds.
