Mappillai Samba Rice Boiled is one of the traditional South Indian rice variety which has its deep-rooted relationship with Tamil Nadu agriculture and culinary heritage. Mappillai Samba – or “Bridegroom's Rice” in Tamil, as it was considered a tribute about strength and celebration. This type is grown with traditional farming methods and when boiled (parboiled) has a higher content of nutrients compared to the white rice polished ones and acquires an intense and earthy taste.
This rice is characterized by its ruddy hue and nutty, somewhat chewy texture. It when grounded is a good source of complex carbohydrate that provides sustained energy, dietary fiber, essential for bowel health and contains useful levels of iron and Zinc which are important minerals with a whole range of benefits in the body. Parboiling results in a higher nutrient retention and better cooking quality where grains remain separate and fluffy after cooking.

Cooking Tip:
It goes well with this mutter paneer and is consistent mushy way even when the rice is perfectly done so I suggest you to wash twice good and then soak it for 30minutes before cooking. 1:2.5, The softer cottony texture ( my preference) rince 1 cup of rice then add in 2.5 cups of water for the porridge or 3 cups of water for a thinner mee sua soup.
