Spiced Peanut Powder

Spiced Peanut Powder is a South Indian style dry podi made from groundnuts that are slow roasted until fragrant, cooled, and ground coarsely with dry red chilli, garlic and salt. The result is a nutty, mildly spicy powder with a coarse, sandy texture that clings well to hot rice and idli.
How it is made
Raw groundnuts are cleaned and dry roasted in small batches, then cooled completely so the powder stays dry and free flowing. The roasted nuts are ground with dry red chilli, garlic and salt in short pulses to keep the texture coarse rather than pasty. No preservatives, colours or added flavours.

Groundnuts are a plant source of protein and dietary fibre, and naturally contain fats, magnesium, phosphorus and vitamin E.
Culinary uses
- Mix 1 to 2 teaspoons with hot steamed rice and a little ghee or sesame oil for a quick podi sadam.
- Serve alongside idli, dosa or adai as a dry accompaniment.
- Stir 1 tablespoon into curries, kootu or vegetable poriyal to thicken and add a nutty note.
- Sprinkle over chaat, sundal, salads or roasted vegetables.
- Blend into chutneys with coconut and tamarind.
Preparation guidance
Use a dry spoon each time. For podi sadam, use 1 to 2 teaspoons per cup of cooked rice with 1 teaspoon of ghee or oil and mix while the rice is hot. When adding to a curry, stir in during the last 5 minutes of cooking so it disperses without turning pasty. Warm gently in a dry pan for a minute if you want a fresher aroma; do not deep roast again as it can turn bitter.
Storage
Store in an airtight container in a cool, dry place away from direct sunlight. Keep moisture out by always using a dry spoon. In humid weather, refrigerate to keep it free flowing. Best used within 3 months of opening.
