Small Palm Jaggery
Small Palm Jaggery, known as Karupatti in Tamil, is a traditional unrefined sweetener made from the sap of the Palmyra palm tree (Borassus flabellifer).

How It Is Made
Palm sap is collected from the Palmyra tree, gently heated, and set into small solid blocks — without any chemical processing, bleaching, or artificial additives.
Nutrition
Contains iron, calcium, potassium, and magnesium — minerals naturally present in palm sap. Has a lower glycaemic index (~41) compared to refined white sugar.
Culinary Uses
Used in traditional Tamil sweets such as Karupatti Halwa, Karupatti Pongal, Karupatti Coffee, and Karupatti Panakam. Also used as a natural sweetener in herbal teas, payasam, and rice-based desserts.
How to Use
Dissolve in warm water or milk before adding to recipes. Use in a 1:1 ratio as a substitute for refined sugar in most recipes. Grate or break into smaller pieces for easier melting.
Storage
Store in an airtight container in a cool, dry place. Keep away from moisture and direct sunlight to prevent melting. Consume within 6 months of opening.
